Varietal: 80% Niellucciu (Sangiovese), 10% Grenache, 10% Cinsault - stainless steel
Vinification: Cold skin contact and cold maceration of the must for 2 weeks. Fermentation between 60 and 65 degrees. Maturation on fine lees for 1 month without malolactic fermentation. Eco-friendly growing, certified High Environmental Value (HVE) without any chemical herbicide. All operations are carried out in a airtight environment with nitrogen protection to preserve the wine from oxidation.
Tasting Notes: A fresh, dry rosé showing bright aromas of mandarin, lemon zest, and ripe red cherry, with a subtle floral lift in the background. The palate is light-bodied and crisp, driven by vibrant citrus and juicy red fruit flavors. Clean acidity gives it a lively, refreshing character, while the fruit remains precise rather than overly ripe or sweet. The finish is dry, zesty, and straightforward, making it an easy, Mediterranean-style rosé built for freshness and casual food pairing.
Food: Great with light Mediterranean-style dishes, this rosé pairs well with grilled seafood like shrimp, prawns, mussels, and scallops, as well as simple herb-seasoned chicken or turkey. It also works nicely with fresh salads such as Niçoise, caprese, or citrus and fennel salads, along with vegetable dishes featuring zucchini, eggplant, or tomatoes. For starters and sharing plates, it complements hummus, tzatziki, olives, bruschetta, and light charcuterie, while soft cheeses like goat cheese, feta, and mozzarella bring out its citrusy freshness. Overall, it’s best suited to fresh, bright, and lightly seasoned Mediterranean cuisine.

Sainte Victoire, Provence
The vineyards of Terre de Mistral extend over 123 acres in different sectors with the furthest located at the foothill of the Sainte Victoire Mountain. Grenache, Syrah, Rolle, Cinsault and Carignan are used to produce the AOP Côtes de Provence and AOP Côtes de Provence "Sainte Victoire". Adjacent to the winery of the Terre de Mistral is clay limestone soil, favorable for higher yield. That area is on a plain and is used to produce the IGP Méditerranée wines such as Merlot, Cabernet, Petit Verdot, small grain Muscat, Viognier, Colombard and Sangiovese grapes.
Since its creation, the wine cellar has seen regular equipment and technological upgrades to make it an advanced tool in the development of all the wines especially the rosé de Provence. This has directly impacted the quality and style of the 100% Sangiovese rose, a fuller bodied rose dictated by the Sangiovese varietal with a very dry finish Provence style!
