Wine: 2013 Beaune "Montee Rouge"

Varietal: 100% Chardonnay

Nose: Beaune is full of delicacy, with a floral nose (white flowers, acacia, honeysuckle), notes of fresh almonds and slightly spicy (cinnamon) accents.

Palate: Dry, med-acidity, low-medium tannins.  A little more masculine than the nose and more classically Beaune.  Alluring, silky and very delicate on the palate, with aromas of vineyard peaches.

Food: Perfect with scallop and gamba lasagna, leek fondue, salmon tartare with citrus confit, langoustine carpaccio. Delicious with cheeses such as Tomme de Brebis, Mont d’Or, Rocamadour, Chevrotin, Mâconnais.  Dessert: cheesecake with chestnut cream and goat's milk, fromage frais or chocolate mousse in a glass.

Cellaring: Drink now or hold until 2021

Vinification: Grapes are picked entirely by hand, destemmed and then gently pressed with our pneumatic press to obtain a pure juice. The alcoholic vinification is started in vats and is then finished in barrels, 30% of which are new.

DOMAINE MOISSENET-BONNARD

Pommard,  Burgundy 

Domaine Moissenet-Bonnard has been in the family for eight generations and was taken over by Jean-Louis Moissenet in 1987. In 2005, he extended the wine-growing estate to the Meursault and Auxey-Duresses appellations. The estate produces nine red wines, four white wines and a Crémant de Bourgogne. The vines are protected from pests and fungal diseases without the use of herbicides or pesticides, and are ploughed in order to obtain healthy vines that dig deep to extract the riches of the soil.

The estate went HVE (Environmentally High Value) in 2014. This certification valid for three years guarantees the methods practiced on the domaine follow strict guidelines for an environmentally friendly approach to viticulture. Focus is on biodiversity, strategic use of non-synthetic products and fertilizers as well as proper usage of water and protection of the water source. The grapes are hand picked, hand sorted, hand selected and then gently pressed pneumatically.

Beaune is a village appellation located in the Côte de Beaune region which includes 42 Premiers Cru Climats.  The only producing commune is Beaune. On the label, the appellation Beaunes and Beaune Premier Cru may be followed by the name of the Climat of origin.

A burgundian icon and capital of Bourgogne’s wine trade, Beaune takes center place on the world stage during the annual Hospices de Beaune wine auction.  The Hôtel-Dieu, built in the Flamboyant style, the huge silent cellars of the négociants houses, and the wine-growing domaines of the district all attract countless visitors. The Beaune vineyards are among the most extensive of the Côte. From here comes brilliant red Pinot of the Dukes of Bourgogne- a red wine, aromatic and full of fire, whose reputation goes back to the late Middle Ages. The whites, less common, make the best use of soils suited to the Chardonnay grape. The Beaune AOC was established in 1936.

Beaune "Montee Rouge" Chardonnay
This 35-year-old plot of about 2 acres faces east on  stratified scree ("grèzes litées") on a very steep incline.  It is partially terraced for better exposure to sunlight, and is worked entirely by hand by Emmanuelle-Sophie. The ground is covered with grass to prevent erosion, encourage flora and promote health of vineyard micri-organisms (mycorrhizae). A portion of the plot (about one acre) is planted with the Chardonnay varietal.
