Wine: 2020 Cheverny Blanc

Terroir: The Grapes are hand harvested. Each Varietal is vinified separately in 100% stainless steel vats on the lies for 6 months. Blended afterwards with light filtration before bottling. Fermentation in barrels and maturing on lees for 12 months.

Varietals: 80% Sauvignon Blanc, 20% Menu Pineau

Tasting Notes:  A pale lemon-yellow in color. Fragrant aromas of honeysuckle, citrus fruit, white flowers and caramel. Zesty acidity with concentration of limes and lychee citrus peel, almond and stone.

Pairings: Oysters, Calamari à la plancha, cheese soufflé, leek and potato soup, king prawns, scallop, chicken stew in a white sauce. Goat cheese salads with caramelized onions.

DOMAINE DE VEILLOUX

Fougères sur Bièvre - Loire

Based in Fougères sur Bièvre, Domaine de Veilloux is a family owned estate of 50 acres of vineyards. The story of the estate is very old as it used to belong the Château de Fougères (18th century). The domaine wasn't only producing wine at the beginning of its existence but was more oriented towards poly culture (cereals, cattle, etc.) and slowly expanded throughout the years.

Sylviane and Michel Quenioux purchased this family owned and operated domaine in 1994, which was certified organic in 1998. The estate is managed according to natural principles (certified organic by Ecocert) with a great care of the various local grape varieties (Menu Pineau, Sauvignon Blanc and Gamay). The soils are mainly made of clay but with slight differences according to the plot considered (clay with sand or clay with flint). The winemaking is respectful of the fruit and the aging is usually long, thus producing complex wines that truly reflect the terroir of the Cheverny appellation.

The appellation area is situated in Loir-et-Cher south of Blois, and encompasses 24 communes. 

Near Sologne and Castles of the Loire Valley, the Cheverny AOC is imperative. Wines of Cheverny have an originality : they always arise from blends, that is to say they are composed with several grapes : Pinot noir and Gamay for red and rosé wines and Sauvignon and Chardonnay for white wines.

Between the Loire River and the Sologne, the area of production extends over a surface of 1418 acres on 24 municipalities of Loir-et-Cher.. About forty wine growers produce 27 000 hectoliters a year. The production divides up into parts more or less equal: half in the white, half in the red and the rosés.  Implanted from the Middle Ages around abbeys, the vineyard arouses the interest of kings of France in the XVI century.

In 1577, the parliament of Paris promulgates a law forbidding the Parisian the purchase of wines produced unless twenty leagues (88 km) by the capital. To answer its demand, the extension of plantations is made at first around Orléans, then more and more towards the downstream, in the direction of Blois and Tours.

The terroir and the men will make a quality wine which will be recognized in 1993 by the AOC.
