Wine: 2020 Saint-Joseph "Emisphere" Red
Varietal: 100% Syrah. The Saint Joseph rouge de Boissonnet is the result of a blend of two, particularly distinct and complementary terroirs. The vines on the highlands of Serrières are balanced with the Syrah on the granite slopes of Saint Désirat. The latter are marked by maturity and beautiful southwest exposure
Harvesting: By hand with a partial destemming at 80%.
Vinification: Alcohol fermentation in thermo-regulated vats (28-33°). Vatting period of 15 to 21 days with moderate cap-punching and pumping-over. 35 to 40 hl/ha with maturing in barrels for 15 months.
Tasting Notes: Intense aromas of blackberry and cassis and hints of spice which continue on the palate with present and integrated tannins and a fresh and fruity finish.
Food: Beef bourguignon, roasted lamb with thyme, and vegetarian tagine.
Cellaring: Aged 12-15 months in barrels, this classic, old-school beauty is characteristic of the appellation. Thoroughly enjoyable, it's also relatively approachable now or cellar until 2032.
