Varietals: 40% Caladoc, 30% Marselan, 15% Egiodola, 15% Syrah

Nose: The color is red ruby with purple highlights. The nose is very aromatic with ripe red fruit and spicy flavors with a hint of toasted notes. The palate is full with fleshy fruits aromas underlined by notes of licorice and Espelette pepper. The wine has a rather long length with a great freshness and fine tannins.

Food: Red and white meats, delicatessen and cheeses

DOMAINE DU PERE CABOCHE

Châteauneuf-du-Pape, Southern Rhone

For centuries, Jean-Pierre Boisson’s ancestors have been both wine growers and blacksmiths. The family’s nickname “Caboche” derives from the old Provencal word for horseshoe nails, by which the estate is still known. Jean-Pierre is the former long-serving mayor of Châteauneuf-du-Pape. Today, his daughter Emilie runs the domaine and is proud to follow a traditional approach to winemaking that respects the environment and allows for the vines to grow to their best potential.

Domaine du Père Caboche covers 156 acres of which 42 acres  located in Chateauneuf-du-Pape and the rest Cotes du Rhone or IGP Vaucluse.

Petit Caboche IGP Vaucluse Red
Responsible farming, mechanical harvest for perfect control of the levels of ripeness and acidity. The Vins de Pays are produced by a method known as partial bleeding of the tank. The principle is to fill the tank with the crushed grapes. After a few hours, and before the start of the fermentation, the tank is bled. This involves drawing off a certain volume of the juice which has already developed some color (according to the desired intensity) and then vinifying it separately in another tank. Temperature controlled maceration for about 10 days.  Aging for 3 to 6 months in 1/2 new oak barrels.

The Vaucluse is located the heart of the Rhone Valley in southeastern France.
