Varietal: 100% Chardonnay
Vinification: 36 hours of clarification then must is transferred to stainless steel vats for fermentation followed by ageing for 14 months in oaks barrels - 30% new. Gentle stirring every 15 days for 5 months.
Tasting Notes: Puligny-Montrachet 1er cru "Hameau de Blagny" is a rich wine with beautiful minerality, a pale yellow colour, and luscious notes of almond paste, vanilla, hazelnuts and white flowers. In the mouth it is well-balanced, with a long, complex finish on notes of peppermint and citrus fruits. Its full personality will be developed in 2 to 3 years.
Food: Perfect with rabbit with mustard and blackcurrant sauce. Roasted chicken, salmon with fennel, scallop veloute and truffle pate.
Cheeses: Munster, aged Comte, goat cheese, Gouda and Morbier.
Dessert: Amandine with figs, pear in Hippocras
DOMAINE MOISSENET-BONNARD
Pommard, Burgundy
Domaine Moissenet-Bonnard has been in the family for eight generations and was taken over by Jean-Louis Moissenet in 1987. In 2005, he extended the wine-growing estate to the Meursault and Auxey-Duresses appellations. The estate produces nine red wines, four white wines and a Crémant de Bourgogne. The vines are protected from pests and fungal diseases without the use of herbicides or pesticides, and are ploughed in order to obtain healthy vines that dig deep to extract the riches of the soil.
The estate went HVE (Environmentally High Value) in 2014. This certification valid for three years guarantees the methods practiced on the domaine follow strict guidelines for an environmentally friendly approach to viticulture. Focus is on biodiversity, strategic use of non-synthetic products and fertilizers as well as proper usage of water and protection of the water source. The grapes are hand picked, hand sorted, hand selected and then gently pressed pneumatically.
Puligny-Montrachet is a village appellation located in the Côte de Beaune region which includes 17 Premiers Cru Climats. The commune of Puligny-Montrachet produces 4 Grands Crus. On the label, the appellation Puligny-Montrachet and Puligny-Montrachet Premier Cru may be followed by the name of the Climat of origin.
Puligny-Montrachet, along with Chassagne, is the most perfect expression of the Chardonnay grape. The appellation was created in 1937 on soils separated by only a few metres from the Grands Crus. The white wines have well-defined personalities and an established reputation. The plots which adjoin the hamlet of Blagny produce an excellent red wine from the Pinot Noir grape.
